Nothing less than an eco-responsible gastronomic experience in a minimalist setting. Chef Tim Moroney, who has worked in some of the world's most renowned restaurants, focuses on renewable energy, responsible waste management and ethical practices, not to mention sourcing from within a 150 km radius of the restaurant. The resolutely locavore menu changes frequently according to what's available and what's in season. An à la carte menu is also available, but only at the bar.
