The chef relies on local produce and varies his menu according to what's available: foie gras from Québec mulard duck, organic charcuterie from Ferme Rheintal, pork from La Jambonnière, beef from La Bouchée d'Or, northern shrimp from Québec, cheeses from Fromagerie du Presbytère, market garden produce from Serres Verrier...
