Achim von Arnim has two loves: champagne and Citroëns. A DS and a 2 CV sleep in the courtyard. As for champagne, Achim has taken up the challenge of getting as close to it as possible by rigorously applying the méthode champenoise, or rather the méthode Cap Classique. Haute Cabrière is the only private estate devoted exclusively to high-class sparkling wines. Haute Cabrière also produces, in very small quantities, South Africa's only ratafia, as well as the tranquille, a delicious gris rosé made from a champagne blend.
