This very good popular restaurant (Τσαρούχας) is a well-known institution for lovers of traditional dishes and revelers coming out of Bit Bazar. The latter come to cure their hangovers with the emblematic house dish: patsas, the Greek version of Balkan tripe soup. As it's prepared here à la minute (with lemon, olive oil, garlic and onion), the chopping strokes of the master tripe-maker constantly enliven the brightly-colored room.
