Madrid's Michelin-starred chef Rodrigo de la Calle is behind this refreshing semi-gastro address on the first floor of the splendid Hotel Almanac. The main protagonist? Vegetables, the central element of "gastrobotany", a concept invented by the chef! Traditional tapas are revisited by placing vegetables, usually thought of as accompaniments, at the center of the creation! Several combinations are available: lunch menus, tasting menus and à la carte. Rodrigo presents his latest inventions at a monthly showcooking event!
