Martial Ray is a master pastry chef and chocolatier. His specialties include nuage du Puy-de-Dôme, a meringue with honey, hazelnuts and almonds, teddy bears with homemade marshmallows, and fruit jellies. He also makes a whole range of chocolate bonbons, including Andésite, with 75% dark chocolate and old-fashioned hazelnut praline, rolled in bitter cocoa. Delicious entremets will leave you with unforgettable memories, such as Ebène with dark chocolate, praline and hazelnut crunch. In Le Cendre, the boutique is accompanied by a laboratory and a tea room.

Le sablé était parfait : croustillant jusqu’au centre, sans aucune trace de détrempe comme c’est souvent le cas. La dacquoise amande était subtilement parfumée au rhum, juste ce qu’il faut. Le confit d’ananas, lui, n’était pas trop sucré mais très savoureux.
Comptez 5€ la pâtisserie, ce qui en fait sans doute les plus chères de Clermont, mais quand c’est aussi bon on du mal à être raisonnable ;-)
