Owner's Message
A louchebem setting: white earthenware tiles, heavy waxed doors from cold rooms of yesteryear; competition trophies and photos dedicated to the Charolais breed; butcher's fangs with hanging sausages; tables dressed in red Vichy between which Yves and Benjamin twirl.
Martial Esteve has taken over this meat bistro, La Vache qui Tète. A graduate of the Chamalières high school, this young chef of Bourbonnais origin also received training as a sommelier. After a stint in Ireland and a few stays in starred restaurants, Martial perfected his training at the Auberge de la Moreno. The chef Yann Kussler, freshly arrived from Montreal, is a classmate from Chamalières. He is assisted by Laetitia Drochon and Aurélie Barrier, specialists in desserts.

Le personnel est agreable et compétant.
J'y suis allée pour de l'aligot, parfait.
Il y a une assiette 'veggie' avec legumes grillés super bons, aligot et salade verte.
Ne reflechissez pas, vous pouvez y aller les yeux fermés.

J'ai commandé un tartare, qui m'a déçu. Coupé très grossièrement (tartare au couteau ne veut pas dire coupé en dés de 1cm !) et mal coupé, 3 ou 4 morceaux pendaient à ma fourchette, accrochés par un nerf ou autre. Le tartare est arrivé tout prêt, mélangé et sans possibilité de faire mon propre mélange de saveurs.
Vraiment déçu par l'assiette
Cadre agréable dans une petite rue et serveurs vraiment super par contre !
