japamar is the Gastromar's "little brother" and operates on the same concept, in a "sushi" version next to the Gastromar. The fish is bought daily from local fishermen. Here, no salmon, of course, it is the reign of white fish. In a vast winter garden overlooking the sea, chef Edu and his team offer excellent sushi, tempura and temaki. You can have a rodizio of sushi. Sardines are also honored. The Japanese gastronomic delicacy seems to have definitely settled in Paraty. Very good service.
