At the Cured of Fix-Saint-Geneys you are waiting for a whole range of mountain products: dried and cooked meats prepared exclusively with high-air auvergne pigs. They use the lean meat (loins, shoulders, breasts, hams) at 80% and the fat of the pigs at 20%, while sausages, sausages, jesus, rosettes are embossés in natural casings.
