He preciously keeps the secret of the basic recipe of the macaroon shell, simple but delicious. Nevertheless, in his show-room in Roche-la-Molière, you will discover all the flavours through his collection of sweet macaroons with chocolate, raspberry, grenadine praline, ice-cold mint and the sweet and sour macaroon collection with green olive tapenade, goat's cheese and Espelette chilli pepper, and snail persillade. It even marries foie gras and chocolate!
