Sébastien and his team take us on a gastronomic journey through local cuisine, Asian and Breton flavors. For example, they marry Breton lobster with yuzu miso and poultry from Guillaume Lottin in Voussac. A filet of Salers beef, eringy and Japanese barbecue. Pan-fried foie gras with shiitake and dash broth. At the salon de thés, cafés, gourmandises. Kouign-amann, cookies, sablés, amaretti, gâteau nantais and iced latté macchiato.
