Since 1985, the cheese maker Jacky Capt (whose family is originally from Switzerland) has been associated with the Arbusigny cooperative to preserve the tradition of fresh milk (milk as soon as it is milked, as soon as it is delivered, morning and evening, 365 days a year). Since it has not been cooled before processing, the fresh milk retains its natural lactic flora and therefore the richness of its subtle aromas. The cheese makers make their cheeses and mature them in the cellars of the dairy.
