The estate takes its name from a shelter built of dry stone that is resistant to the bad weather of summer and the rigours of winter: the "cabotte". The owner of the estate - daughter of a Burgundian winegrower - has chosen organic and biodynamic farming. The result is a mixture of modernity and ancestral gestures. Nature is respected, scrutinized, patiently modelled. The estate has 3 terroirs: the Uchaux massif, the Côtes-du-Rhône in white and red (Colline Blanc and Colline Rouge). Since 2005, a parcel of Châteauneuf-du-Pape has been added.
