Read moreThe Cauvin family has been farming the land of the Mas de l'Aqueduc since 1965. Although the family first specialised in the cultivation of Crau hay, the olive orchard was planted in 2003. The olive tree is very well adapted to the dry and windy soil of Crau. The 12 hectares, cultivated organically, are composed of about ten varieties, the main ones being aglandau, bouteillan, arbequine, arboussane and koroneiki (Greek variety). The blend of these varieties provides a very sweet oil with herbaceous, artichoke and almond aromas.
