Daniel Fino has set up his own jam-making workshop in the pretty village of Mimet, where he makes real jams in the traditional way, with a minimum of 60% fruit. These include classic Provençal jams made with pear, fig, raspberry or persimmon, as well as more surprising jams made with wild fruit (sloes, jujubes, sirodon, i.e. wild rose).
