In the Rue Beauvau, linking the turbulent Canebière to the pedestrianized Opera district, chef Denis Ansaldi's Café Bovo is one of those addresses that deserves a closer look at the menu. Everything, really everything, is homemade. No exceptions. Mackerel escabeche as a starter, smoked pork loin cooked for 24 hours as the special of the day, or one of the house classics: homemade bigolis (a kind of large, fresh spaghetti) served with your choice of bresaola and/or burrata. Gourmet to perfection.
