It is THE butcher's table in the literal sense of the word, because the meats on the restaurant's menu are those of the butcher's shop, matured and exceptional meats, tender and tasty, French meats. And if the particular piece you want is not on the menu, you choose it on the butcher's stall, it is cut up for you and the chef brings it to your table, cooked as you wish.
