Vinification: As soon as it arrives at the winery, the harvest is distributed to a destemmer, which separates the grape berries from the unwanted stalks. The grapes are then cooled to a temperature of 10°, and transported to pneumatic presses, which enable gentle, gradual pressing, preserving the aromatic finesse of our harvest. The must is kept at a low temperature. Fermentation takes place in temperature-controlled vats at between 16 and 18°. Finished wines are blended, then filtered over winter.

Tasting notes: Characteristically flinty, this wine has made Cassis Bodin famous. Very expressive nose, mineral, floral, very fresh, with citrus notes.

Food pairing: Ideal with shellfish, grilled fish and bouillabaisses.

The resulting must is put into barrels and fermented in wood. The temperature is naturally regulated. Once alcoholic fermentation is complete, the wine is aged on its fine lees for 12 months to nurture its complexity.

Tasting notes: Rich and complex, with brioche and slightly toasted aromas.

Food pairing: Fish, creamed white meats

Serve chilled: between 12 and 14°C

This Muscat is made sparkling by a gasification process.

Tasting notes: A wine with an aroma very typical of the grape variety. Very floral nose, reminiscent of the terperic aspects of Muscat.

Food pairing: Ideal with all types of aperitif, including foie gras.
