At the foot of Montmajour abbey, Nicolas de Sambucy cultivates 10 ha of olive trees in the family domain. Century-old trees, recepés of the 1956 freeze, and young plantations (2002). It achieves a stamped oil AOP Vallée des Baux-de-Provence, in a fruity green, which has just obtained the organic label. Pressed at the mill of the Marguerite Plains, olives are not harvested by variety, and the assembly of the oil is therefore «handed over to nature», as the owner likes to say, which also grows 130 ha of cereals.
