There are the emblematic Marseillaises and then there are the Aixoises... The navettes, made by Laëtitia in the lab adjoining the store, are different but just as good as their cousins. Flour, butter, eggs, orange blossom: the ingredients are the same for this long, tender, boat-shaped cookie, a commemorative symbol of the arrival of the Saintes Marie on our Provencal shores. Laëtitia adds her biscuit-making touch, and also makes macaroons, almond croquants, canistrelli and olive oil cake.
