The blessing of the calissons is a Sunday event not to be missed, with several highlights in town. Traditional and delicious!
Calisson is a sweet little lozenge of finely ground almonds, topped with Provençal melon and orange peel, set on a bed of host and covered with a jewel case of royal icing. An Aix speciality whose origins date back to the 15th century! In 1995, the Confrérie des Échansons du Roy René (a brotherhood that defends Aix's gourmet heritage, including wine and food) revived a religious tradition that dates back to 1630, when the assessor Martelly vowed to give thanks to the Virgin of Aix if she would intercede to extinguish the plague epidemic, every year on the first Sunday in September. Over the years, the tradition of offering calissons to the faithful on this occasion was established. The revival of this lovely tradition delights the people of Aix-en-Provence and their visitors. The procession of the calisson maiden departs from the cathedral and arrives at the church of Saint-Jean-de-Malte, where the archbishop blesses the baskets filled with calissons from Aixois artisans, before distributing them to the faithful gourmets and the holy tasting. Throughout the day, there will be numerous artisan stands on the theme of calissons and almonds. "Venès tóutei pèr lei calissoun"!
