The olive oil produced here is a little jewel. From 6 hectares of organically farmed olive groves, Guillaume produces: a mouth-watering Haute-Provence PDO, 2 single-varietal oils based on bouteillan and aglandau, and 2 lemon or bergamot-flavored oils. The olives are harvested by hand to ensure optimum ripeness, and pressed quickly to retain maximum flavor. And in an eco-friendly spirit, Guillaume uses the remaining olive paste to spread on his land as fertilizer, and the stone waste to fuel the stove.
