The olive oil produced here is a little jewel. From the 6 ha of organically grown olive trees, Guillaume produces: an explosive Haute-Provence PDO, 2 mono-varietal oils based on bouteillan and aglandau, and 2 lemon or bergamot flavoured oils. The olives are harvested by hand to ensure optimum ripeness and quickly pressed to retain maximum flavour. And in an eco-friendly spirit, Guillaume uses the remaining olive paste to spread on his land as fertilizer, and the stone waste to fuel the stove.

OLIVIERS DE NOTRE-DAME

During her agronomy studies, Geneviève Auric had no intention of taking over the family farm. And yet, 19 years later, she does not regret her choice. With her partner Laurent Bouvin, she farms organically some forty hectares of lavender and lavandin, cereals and 1,142 olive trees to be precise. With their trees, the couple produces a blend of oil, pressed at the Bonaventure mill, which they produce in fruity green and fruity ripe. These nectars are sold at an affordable price and are of very good quality.

OLIVERAIE DU PETIT SAINT JEAN

7 ha on the Valensole plateau. Josiane and Gérard Terrasson have planted 1,500 trees, 90% of which are of the aglandau variety, which lends its typicality to their oil, an organic PDO Haute Provence olive oil that has won several medals at the Concours Général Agricole. The estate is located in the Alpes de Haute Provence, and the olives are crushed at the Moulin de Gréoux and the Moulin Bonaventure in Valensole, but they also sell their oil from their home in Aix, as well as in local organic stores
