L'Échanson offers refined French cuisine in a sober and modern setting near the cathedral. Among the specialities are sea bass fillet and quinoa à la provençale, monkfish rolled with salmon, lentils and sweet potato, or veal tenderloin with mushrooms. In this fine brasserie, wine is also in the spotlight: and with good reason, originally, the cupbearer was indeed a trusted officer in charge of serving the prince or lord a drink. The customer is therefore offered a rich list of great wines, served by the glass or bottle. With a capacity of 75 covers in normal times, the restaurant can also accommodate up to 110 people.

Très bon accueil. Un restaurant où les prix sont abordables alors que je ne le pensais pas. C'est délicieux et on était bien installés. On y retournera pour tester leur formule brunch du dimanche matin.

Restaurant avec vue sur la Cathédrale. Le service est impeccable - la formule du midi est trè abordable, cuisinée avec des produits frais et souvent évêque une touche régionale. A découvrir.

Manque cruellement d'un troisième serveur. Attente assez longue.
