In the basement, an imposing ^12th-century Romanesque vaulted cellar leads to a dungeon and an oubliette where archaeological remains have been found. You'll be able to taste Senlis' famous beer (Saint-Rieul), hypocras, rose elixir or red thorn elixir. Guided tours will take you back in time and into the atypical world of Laurent Thomas, the man behind the concept. You'll also find a boutique featuring stone and wooden statues.
