The Palace of Teas has been a long-standing artist… Its founder, François Xavier Delmas, has been touring plantations around the world in search of the best wines for 25 years. The Palace of Teas, of course, offers the classic classic wines "nature" and for the amateurs, few rare and ephemeral vintages, which last the time of a harvest. Sophie, Mathieu and Victorine, three friends who graduated from the Nicolas Appert hotel school, have embarked on a homemade adventure. Foccacia salmon avocado, tomato tart... great flavors on the savory side as well as for sweet breaks. Pastries are designed according to the seasons. You'll love the raspberry heart brioche, the lemon pavlova, the buckwheat choco tart or the typically Swedish cinnamon cake, the aptly named "Kanelbullar". Hot chocolates, craft beers, fruit juices and iced tea enhance the choice of beverages. An elegantly decorated place for a refined break in this pretty patisserie-tea room.

Cime is the ambitious project of Esther and Gregory. The three friends and associates chose this evocative name and the hot-air balloon that represents the brand because they intend to take you on a journey over the mountains and volcanoes whose slopes are ideal for growing coffee. This is Nantes' first artisanal specialty coffee roaster. In this pretty coffee workshop, the beans of prestigious Arabicas are selected with the utmost attention to quality, freshness and respect for producers and the environment. Sacks of green coffee occupy the back of the establishment, coming from Rwanda, Bolivia, Panama, Honduras, Ethiopia, El Salvador... thanks to the shortest possible circuits. And it's the Giesen roaster who roasts the beans in a way that's adapted to each production: the coffee beans gain in volume, lose their moisture, release their aromas... The beans are then left to rest for 24 hours to allow the gases to evaporate. This artisanal roasting process produces coffees of the highest quality, with transparent traceability from producer to cup. The coffees are sold as beans or ground to order, and are also available to catering professionals: Meraki and Arlot Cheng have already adopted them. Each coffee is accompanied by an explanatory sheet to learn more about its identity, profile and origin: for example, Finca El Encino from Honduras seduces with its milky texture and chocolate-hazelnut notes. Or Karambi from Rwanda, whose sweetness underlines its citrus notes. El Salvador's Divina Bourbon, whose natural drying process reveals notes of honey and caramel, will also surprise you. Tasting workshops are organized around the adobe Cupping Table where you can sample the coffee: first observe it, then smell it in its different forms: bean, ground, wet, before breaking it, then tasting it. Attentive to its structure, its density, its bitterness, its sweetness, its finish, we discover coffee in a new light thanks to Cime. A second address opened at 4, rue Santeuil in August 2023.
