Michael Collins is a snail enthusiast. So, for all lovers of this very French product, his snail farm is a gold mine! He has been based in Râches since 2008. Here, no chemicals are used; the snails are pampered right up to the moment they reach your plate. He prepares, with brio, court-bouillonnés snails to be served yourself, stuffed mini cabbages, terrines, and even a famous snail chipolata. Not to mention a thousand recipes for croquilles! It's worth being surprised!
