DESPINOY CANDY

Here's one of the confectioners who makes the famous bêtises de Cambrai by hand. As a reminder, these candies are said to have originated from a mistake made by an apprentice confectioner in the ^19th century. The wrong amount of sugar and mint, the inadvertent introduction of air into the dough... the bêtises were born. Despinoy produces 140 tonnes of bêtises a year, with mint and fruit. Despinoy also makes bêtise syrup and a digestive, crème de bêtise. You'll be greeted by a candy before setting off on a tour of the production process.
