To be in the north of the Nord department and not to see a chip shop in Dunkirk would be the height of it all. Here is a chip shop that will fill the gap and, without revolutionizing the principle, still breaks a little the codes of the genre. The establishment is at the corner of two streets: Poincaré Street and Royer Street. The facade, clearly visible, is rather chic. The interior furniture is surprising: an urban and industrial style. The furniture was made to measure. Babeth, the boss, who has been in the restaurant business for 20 years, will welcome you and her employee. The speciality of the Heart of Babeth is precisely its ultra-soft brioche round breads made by a local baker who supplies it daily (sometimes twice a day). In other words, it couldn't be fresher! The products you are about to consume are displayed in front of you. Espitalier-Garcia, a famous Dunkirk establishment, provides the main source of meat. The fries are fresh and cooked 100% in beef white. Cheese sauces (maroilles, cheddar and current sauce) are homemade. Babeth also offers salads and regular suggestions. Possibility to park nearby and enjoy in the new park of the nearby library.

Il s'agit d'un commerce à échelle humaine (4 ou 5 tables maximum) donc pour se restaurer sur place, il vaut mieux réserver.
Les prix y sont supérieurs à un kebab lambda mais équivalents à une grande chaîne de restauration rapide. Pour un hamburger, une portion de frites et une boisson, compter 13.50 € environ.
Paraît-il que les frites sont cuites dans du blanc de boeuf mais mon palais n'a pas décelé de différences par rapport à de l'huile de friture classique...
Babeth, la propriétaire, est la star de l'établissement, le personnage, le "concept". Dès l'arrivée, vous ne pouvez la manquer, elle est au centre du tout et accueille les clients avec chaleur et bonhommie. Les clients sont appelés "mes chéris". L'équipe de l'enseigne (qui semble familiale) travaille avec enthousiasme et un entrain rafraîchissant comme si c''était à chaque fois le premier jour d'ouverture.
Je repars avec le sourire de Babeth et son clin d’œil complice qui resteront gravés dans ma mémoire et comme intrinsèquement associés au dunkerquois...
