As early as 1957, a few winegrowers with insufficient cellar facilities decided to create the Cave Coopérative de Saint-Sardos. In 1960, they established a standard vineyard in order to limit planting to the best noble grape varieties on the best terroirs. The vineyard took off and the winemakers obtained their first Appellation d'Origine Simple. Motivated and encouraged by this result, this management team formed the Saint-Sardos local wine producers' union in 1974.
