Cédric Millet is a pastry chef who travelled the world before settling on the banks of the Tarn in Albi. He has a real talent for combining two flavors with lemon, creating seasonal creations: autumn fig and pumpkin, winter apple, spring grapefruit... He combines herbs: mainly mint and tarragon. Seasonal fruit is the keystone. Original dishes include black garlic chocolate and olive clementine. A lunch menu with a choice of quiche, salad and dessert.

You get to sit on the terrace by the Tarn with a beautiful view.
For what I tried, the tarte aux fraises is 10/10, everything is on point. The brownie is good as well. For the chocolate cake, the woman at reception already told me that they have classic chocolate cake and something more risky because they use herbs in it. So I went for the one with herbs and I didn't like the combination, but it's beautifully made, just didn't suit my palate. I will certainly come back to try more things.
