Hotel-restaurant with an open kitchen concocting a bistronomic cuisine.

L'Informel is the second restaurant to be opened by the team at Les Trois Soleils hotel-restaurant in Montal, whose chef is none other than Michelin-starred Frédéric Bizat. Frédéric Bizat's smiling wife, Florence, welcomes guests and takes care of service in a bucolic setting. Featuring an open kitchen, the large air-conditioned dining room is extended by a green terrace at the foot of the hotel swimming pool. Enjoy grilled Aubrac beef or Quercy lamb chops, cooked with great skill.

The food at Les Trois Soleils de Montal is really something special. We have been here three times now, from Australia, and each time it has been wonderful. My favourite courses this time were the cold tomato soup with herb sorbet (I did not even know that I liked cold tomato soup, til now), the Mont Royal squab cooked twice with sweet garlic cream(very tender), the upside-down basket of provincial apricots with raspberry and pistachio choux pastry, and the pork dish. I love the way Monsieur Bizat adds extra herbs, spices and other flavours to each dish to make it unique. It is very original cooking. The lovely sommelier found us a brilliant Chardonnay that was not too expensive. Madam Bizat always makes sure there are delicious macarons in the room for when we arrive. We really appreciated the big, clean pool, as it was hot for the 2 days of our stay. There was a shady tree that caste its shadow onto the pool so we did not get sunburnt. We had a health issue while we were there. Madam Bizat and another staff member were really kind and helpful.

Une très belle découverte, nous qui adorons la nature et la verdure, nous avons été servis! Dîner au restaurant l’Informel, également très positif. Dommage pour la route qui passe assez près de la belle piscine, mais c’est souvent le cas et cela ne mérite pas une étoile en moins. Pour terminer, l’accueil et la courtoisie des hôtes sont exemplaires. Je recommande!

Nous venons de passer une semaine aux Trois Soleils de Montal, sur recommandation d'un ami. Nous ne regrettons pas ce choix: accueil, gentillesse et discrétion du personnel, qualité du cadre et de l'environnement, calme, confort, tout est réuni pour un séjour réussi dans un beau parc ombragé.
Une mention particulière pour les 2 restaurants: service, qualité, finesse et recherche des mets ainsi que les conseils avisés de la sommelière, pour une expérience gustative réussie.
Nous recommandons vivement ce lieu de séjour.
