The famous pastis quercynois is not to be confused with the drink from Marseille, because "pastis" comes from "pastry" in old French. It is a delicious cake with a very thin pastry base, sliced apples and a rum syrup. The slow cooking makes this cake a subtle mixture of crunchy and fondant.
