Chef Baptiste Perthuison juggles spices, originality and the renewal of French gastronomy with fresh, local and often organic produce. While the dishes are refined, the atmosphere remains relaxed. On today's menu: gambas tartare, 63° organic egg with green curry emulsion, grilled tofu, pine nuts, guinea fowl ballotine with figs and walnuts, eggplant purée with tamarind, marinated strawberries, tarragon ice cream, lemon cream...
