Bleu des Causses is an emblematic cheese of the Massif Central and an essential element of the Aveyron region. The Syndicat du Bleu des Causses has the heavy responsibility of ensuring that the conditions of production of the Protected Designation of Origin (PDO) that this cheese received in 1979 are respected, and in particular its maturing in natural cellars.
