LE NAJAC

Laguiole isn't the only village in Aveyron to have its own knife. Najac also has its own, thanks to Régis Najac - yes, this craftsman is named after the village in which he has set up his workshop! His "couteau de paix", as he calls it, is a simple, rustic folding knife with a round tip. Régis Najac subcontracts the manufacture of the blades to the Forge de Laguiole, but shapes the handles himself from materials he chooses more for their history than for their aesthetics. Knives are on sale at the workshop, which is open on request.
