Founded in 1996, this cooperative now brings together 32 producers from the Larzac and Lévézou regions. With 49 employees, they process 4.5 million liters of ewe's milk every year. Their regionally-typical cheeses come in several ranges. Tommes, pérails and bûchettes fondants are sold directly from the cheese store. You'll also find brousse and encalat: a kind of sheep's milk camembert named after the curd. We recommend the latest addition: fromage blanc battu made from whole sheep's milk.

Je recommande cette coopérative.
On peut même y trouver selon le moment de la crème fraîche et du lait.
Mais attention tout est exclusivement à base de lait de brebis !
