LES CONSERVISTES
In Saint-Sever, Baptiste Gougy, Yohan Labarrère and Romain Pajaro are renewing the image of canned food with modern packaging. And while they emphasize local products such as Biscay pork, Béarn pepper and Landes foie gras, the three partners are also working on pâté and rillettes with unexpected flavors: Landes pine, fig-wood smoked pepper... In just a few years, Les Conservistes have succeeded in modernizing pâté, while preserving traditional know-how. An audacious gamble in the Landes region, but one that has won unanimous acclaim.
