Gastronomical, this one draws from the soil and the tradition, while taking height thanks to the Chef's inspirations. See for yourself: scallop and pear tartar, lobster ravioli with vanilla, medallion of sweetbreads accompanied by forest tuberous chervil and morel sauce, banana moelleux, jasmine, cocoa tube and Jivara mousse with banana flambé cream.
