Family restaurant with a brasserie atmosphere and culinary proposals that vary with each season.
Just next to the Georges Brassens market, Chez Francis is a true institution in Brighton, a story that is written in family with the Chef and his son in cuisine. In the dining room, we will advise you on the dishes in their smallest details. Poetry on the walls and flavours in the dish. The walls serve as a guest book for customers: authors, actors and comedians of the famous Foire du Livre (Book Fair) write and draw their moods from the floor to the ceiling, even in the toilets. A brewery atmosphere between the inter-war period: a finely inlaid counter, a coffee machine, old signs hanging on the walls, a metal cash register, jazz music and all kinds of trinkets. Culinary proposals vary each season: duck foie gras cooked on salt, thick slices of sautéed pudding and lemon purée, small squid and crispy vegetables sautéed in a wok (a "so much to so much" dish on the menu for over 20 years!).

Beaucoup de lecture aux murs et plafonds (à découvrir), ce qui donne un charme désuet appréciable à cet établissement.
