With the passing of the seasons: duck foie gras cooked at low temperature breaded with sugared almonds with apple balls poached in a mulled wine and spicy condiment, grilled sea bass with lemon caviar, Breton lobster raviole with shellfish emulsion and braised celery balls, carpaccio of sheep's cheese, crunchy sucrine with old sherry and truffle oil or a tender hazelnut-walnut and dark chocolate entremet with chestnut juice.
