Perrine and Etienne Schaller have taken over part of the farm from Michel and Bénédicte Bachès, who have kept the nursery, and grow citrus fruit for sale. They produce 450 varieties: caviar lemon, combava lemon, Buddha's Hand, Centennal kumquat, Kalamansi, Yuzu, Satsuma mandarins, extraordinary and unknown varieties with absolutely extraordinary flavors and colors. They supply great restaurants and many starred chefs. A know-how inherited from their predecessors which makes the difference.
