Since 1995, when the cooperative opened, the Pays d'Ensérune winegrowers have combined tradition and innovation. Their 3,200-hectare vineyard, spread over 11 villages, features classic Mediterranean grape varieties such as carignan, grenache, muscat and cinsault, as well as AOPs such as Saint Chinian and Coteaux du Languedoc. Two tasting and sales cellars are available: one in Nissan-lez-Ensérune, with late-night openings on Wednesday evenings, and the second in Cazouls.
