Next door to Carré d'Art, Franco-Hungarian couple Maxime and Diana introduce gourmands to làngos, a Central European specialty. Maxime prepares this thick, deep-fried pancake, a cross between a focaccia and a doughnut, according to the family recipe of Diana, who is Hungarian. Crunchy on the outside and soft on the inside, làngos are traditionally topped with cheese, crème fraîche, garlic and paprika, but they also come in creative versions: with brandade, Nîmes-style, or raclette in winter.
