La Maison Escourrou, a family-owned cannery in Chaur since 1963, treats gourmets to their specialities with the flavour and originality of our local products. All its specialities are home-made and French, awarded many times at Aude Gourmande. You won't be able to resist the terrines, foie gras, confits, hams, preserves and cooked dishes, but the must-try is the cassoulet in terrine, made with the same recipe for over half a century. The Escourrou House is a member of the Castelnaudary Cassoulet Brotherhood.
