Laurent Leymonie worked for thirty years in the audio-visual sector before converting to the restoration. During the course of training he discovered the smoking of salmon and left. In his workshop, he uses exclusively Scottish Salmon Label for smoking. The fish is delivered for every cigarette from a Rungis wholesaler, a guarantee of quality and freshness. It is salted with dry salt, smoked in beech wood and then sliced by hand. The product does not undergo mechanical action or freezing. Laurent Leymonie wrote the Smoked Salmon pleasures, where they provide information about the salmon industry and book more than recipes exclusively dedicated to smoked salmon.
