Although the Safa smoking workshop, created in 1926, was relocated to Choisy-le-Roi in Val-de-Marne, the shop remains in Montreuil. This is fortunate because the salmon are filleted by hand and cold smoked very slowly with oak sawdust. They are farmed in the wild in Ireland, Norway or Scotland and have been certified organic since 1992. The house's flagship product is SAFA (Wild Baltic, Organic) salmon marinated or smoked in the traditional way, with dry salt. You can also buy sea bream, smoked eel, sea bass or rainbow trout, all organic.
