Jérôme Saulnier has been established at the foot of the old town's ramparts for nearly a decade, and his success has never wavered. A former member of the Pralus family, the chocolatier boasts an undeniable technique, which he applies to ganache, the house specialty. His beautiful displays feature classic compositions as well as more original recipes: fruit ganache, olive oil ganache, rose ganache and lemon basil ganache. You'll also find seasonal chocolates, confectionery and tea.
