Jérôme Saulnier has been established at the foot of the old town's ramparts for nearly a decade, and his success has never wavered. A former member of the Pralus family, the chocolatier boasts an undeniable technique, which he applies to ganache, the house specialty. His beautiful displays feature classic compositions as well as more original recipes: fruit ganache, olive oil ganache, rose ganache and lemon basil ganache. You'll also find seasonal chocolates, confectionery and tea.

Founded in 2021, the Provins brewery has put the town on the map for craft beer lovers, offering a fine range of local beers in the heart of the medieval city. The brewery's catalog of beers includes whites, blondes, ambers, browns and IPAs, not to mention specials, for a good dozen possibilities. You can enjoy them to take away or on site, in their superb old-fashioned pub, reminiscent of English taverns, with its wood and busy decor. Plates of artisanal products are also available.
