Philippe rigorously selects the best raw-milk cheeses according to strict criteria of quality and producers' know-how, and matures them with patience and meticulousness, in the purest respect for tradition. His techniques are 100% artisanal. He offers individually matured cheeses, as well as platters and buffets for special events.
